With its Paris-metro subway entrance, a nod to Alice in Wonderland, and its former use as the city morgue, The Rabbit Hole offers a one-of-a-kind dining experience.


Let’s unpack the history a bit more, as there’s much to take in. During the 1900s, Colorado Springs built the underground morgue primarily because temperatures were cooler and the space offered more privacy. The morgue moved in the 1950s, and the space was converted to a Moroccan restaurant in the 1990s. Years later, The Metropolitan bar occupied the space until Joe Campana purchased it in 2011 and converted it into The Rabbit Hole.


As if the history of the morgue doesn’t add enough skin-crawling intrigue, local artists Phil Lear and Douglas Rouse added gothic works seen throughout the eatery.


The Rabbit Hole is considered fine dining, but it has no strict dress code and features a menu with names you can pronounce.


While the setting and vibe are spectacular, it’s the seasonal, upscale New American plates that keep diners coming back.


Not wishing to rest on his laurels, Campana went on to open several sister concepts. Within walking distance of The Rabbit Hole are cocktail lounges Shrunken Head Tiki and Shame & Regret, while Bonny & Read Seafood offers upscale dining above ground.

Vibe

The subway-style entrance on Kiowa Street is your first clue that you’re in for a special evening. Look for the neon red The Rabbit Hole sign on the glass entryway.


Head downstairs into a space with dark tones, moody lighting, and striking artwork by Phil Lear and Douglas Rouse. The Wonderland-inspired touches don't feel gimmicky, and every corner leads to an elegant yet mysterious space.


Dining areas are intimate spaces with booth and table seating, offering privacy. The well-stocked bar offers a front-row view of cocktail work, ideal for solo diners or a quick drink before your table opens.

The Rabbit Hole: Menu & Drinks

The choices in the Shareables & Nibbles are diverse enough to be combined for a tapas-style meal. Case in point: the Meat and Cheese Nosh Board. This charcuterie offering features chef’s choice of rotating meats and cheeses, fresh fruit, house-made bourbon mustard, roasted garlic cloves with crackers and crostini.


Add the Brussels sprouts, whiskey sticky ribs, and pork green chile, and you have a shareable meal.


Moving to the dinner options, the Rabbit Meatloaf is nothing like the one your mom made. The blend of ground rabbit and pork sausage is wrapped in honey-cured bacon and finished with a chipotle-honey demi-glace. Add the garlic mashed potatoes and roasted garlic-herb carrots, and with one bite, you’ll understand why this dish is a crowd pleaser.


A twist on a comfort food classic is the Truffle Mac n’ Cheese. This cheesy wonder features Cavatappi pasta with roasted garlic, smoked Gouda, truffle oil, and fresh herbs. It comes with bacon, or choose broccolini to make it vegetarian. The dish is finished with a Gluten-free Panko topping, making it suitable for those on strict diets.


Seafood lovers will marvel at the herb-crusted salmon, while the Mediterranean chicken pasta and tofu hash prove there’ssomething for everyone. No matter what you order, save room for the three-layer carrot cake that’s made in-house. It’srich and satisfying, making it the perfect finish to your meal.


The seasonal cocktails match the food's creativity, like the Pom Royal, with pomegranate liqueur, fresh lime, and your choice of Código Reposado or Spicy Ghost tequila. Add the regular cocktails, beers, wines, and top-shelf spirits, and there’s a beverage for every budget, palate, and occasion.
