The saying that “good things come in small packages” is especially true at Skogen Kitchen. The quaint eatery in Custer serves world-inspired, chef-driven cuisine, earning it national recognition from prestigious organizations like the James Beard Foundation.
The creative visionaries for Skogen Kitchen are Eliza and Joseph Raney. With Eliza as General Manager and Joseph serving as Executive Chef, they built a seasonal menu, offering a big-city dining experience with small-town charm.
The couple hail from Southern California, where they worked with some of the best names in the industry, including Disney and Patina Restaurant Group. While the move to Custer was to reconnect Eliza to an area reminiscent of her Minnesota childhood, Joseph also benefited, as the South Dakota town and region welcomed his culinary vision.
The couple named the restaurant Skogen, which means “The Forest” in Norwegian, to honor the Raney heritage. The menu, however, draws influences from Thai, Mediterranean, and classic American flavors. Toss in the renowned Chef’sCounter, and it's easy to understand how it has become a household name.
While vacationers flock to the Black Hills to explore Custer State Park and Mount Rushmore, they also head to Skogen Kitchen. In fact, diners drive in from Colorado and beyond to savor the menu’s offerings. All this to say that if you’re interested, book your reservation ASAP!

Upon arriving, the standalone small building may not impress. After all, wouldn’t a James Beard-nominated eatery have a fancy facade? Instead, you’ll find the revitalized facility has a simple sign, awning, and street-facing windows allowing views of the kitchen and dining area. Just remember: “good things come in small packages,” even those without all the glitz and sparkle.
Step inside and the cozy, relaxed setting is your first clue that you’re in for an amazing dining experience. Soft jazz fills the room that seats around 50, while the Chef's Counter offers the best seat in the house as you savor seasonal chef favorites. When the weather suits, the covered outdoor patio offers a comfortable al fresco spot.
After a day driving the Needles Highway, the intimate room strikes a balance between refined and easygoing. It works for a romantic dinner, a family celebration, or a group of friends swapping on any South Dakota trip.
Skogen Kitchen: Menu & Drinks
Like the building, the menu is small but is done so with purpose. The limited offerings let chefs focus on quality, not quantity. Additionally, they have creative freedom to showcase seasonal ingredients that may have just arrived.
One appetizer that is a regular (and a must-try) is the Lobster Steam Buns. Guests from as far as New England call them a highlight with plenty of flavorful lobster, Hollandaise sauce, and green onions.
For entrees, the Buffalo Short Ribs feature fall-off-the-bone meat paired with rich, balanced flavor that suits the setting. Vegetarians and pasta lovers gravitate toward the Sweet Potato Agnolotti, served with yuzu butter, morel mushrooms, English peas, and a brown butter crumble.
The Duck Leg is another favorite, dressed with a Thai curry sauce, Minnesota wild rice, and toasted peanuts for a global twist.
While not publicized, the Chef’s Counter offers an immersive dining experience, with a front-row view of Chef Joseph Raney and his team creating a multi-course meal. While not a fixed “order from a list” format, you’re led by Chef Raney, who combines global influences with seasonal ingredients.
The wines and beers offered at Skogen are refreshing and selected to pair with the entrees. You’ll also find soft drinks, lemonade, coffees, teas, and espresso.
